Vos principales responsabilités en tant que Chef de partie de nuit seront:Opérations de restauration· Assurer et maintenir en tout temps les standards qualitatifs fixés par le chef exécutif.· Être en mesure de couvrir chaque station de la cuisine Maison Boulud avec aisance.· Contrôler la qualité de tous les produits alimentaires nécessaires à la production finale des mets.· Aider le sous-chef à s’occuper des commandes et de la gestion du stock.· Établir une communication efficace au sein de la cuisine Maison Boulud avant et pendant le service afin de garantir l’efficacité dans l’envoi des assiettes et la coordination entre les différentes sections de la cuisine.Gestion de personnel· Développer la motivation et l’esprit d’équipe de la brigade en créant un bon climat de travail.· Superviser le travail des commis de cuisine.· Veillez à ce que le respect des règles d’hygiène et de sécurité soient respectées par l’ensemble des employés.· Être en mesure de prendre en charge la brigade lorsque le Chef et les sous-chefs ne sont pas là.Entretien· Assurer le respect et le bon fonctionnement des équipements de la cuisine.· Effectuer le contrôle quotidien de la température et du nettoyage du réfrigérateur.· Impliquer les commis dans l’entretien du matériel de cuisine.· Surveiller l’entretien de la cuisine.· Diplôme d’études professionnelles en cuisine d’un institut reconnu tels que DEP ou AEC en cuisine.· Minimum de deux (2) années d’expérience en tant que demi chef ou commis 1 dans un restaurant..
